Molasses Crinkles


  • 350g all-purpose flour
  • 1 tsp ground cinnamon
  • 1/2 tsp ground clove
  • 1/2 tsp ground allspice
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 3 Tbsp grated ginger root
  • 200g brown sugar
  • 1 egg
  • 175g molasses
  • 1/2 stick butter, softened
  • Demerara sugar (for sanding)


  1. Preheat oven to 350°.
  2. Add dry ingredients to a large mixing bowl and whisk together
  3. Cream butter and brown sugar, preferably with stand mixer; a handheld electric will work, but may struggle later, as the dough is very stiff.
  4. Add egg, ginger, and molasses and mix until well-combined.
  5. Beat in flour mixture.
  6. Roll dough into 1" balls, press tops into Demerara sugar, place on cookie sheet about 2" apart
  7. Bake for 11 ½ minutes (adjust to your taste).
  8. Let stand on the cookie sheet for several minutes before transferring to cooling rack.
